In a vegetarian household, there are going to be those days where dinner is "just vegetables," as my grandmother used to worry. But that does not mean that dinner is boring! It might start out as your normal, everyday bowl of salad, but once you add in everything but the kitchen sink, you actually have quite a satisfying meal.
The salad started as most salads do - lettuce, tomato, cucumber and carrot. Good base. Then start adding more veggies - red pepper, green pepper, sugar snap peas, pea pods (similar, but different...!) and avocado. Then there are the roasted brussel sprouts. Phew! That's a lot of veggies. That's it, right? Nope. Next come the non-vegetable salad fixin's. Sunflower seeds, quinoa with almonds and cranberries, pasta, (cheese for Hubby) and some home made honey mustard dressing. Normally there would be some hard boiled eggs and some toasted chick peas, but I guess I was feeling too lazy to get those together. Put it all together, and there is one salad that is anything but bland!!
